Cast Iron is my go-to, and I get a lot of questions on stories about how I use it, especially how I get it non-stick for my eggs. So here are my best cast iron tips: • ?Always heat the skillet over medium (medium-low, if your stove runs hot), until it comes to temperature. You can test this my dripping water on it. When the water evaporates immediately or beads and danced around, the skillet is ready. NOW add your cooking fat to it. Followed by the food. Rotate the skillet on the burger occasionally to help with even heating. • ?Cook at this temperature, it doesn't need to go higher. Be patient. Your eggs will cook (until whites are completely solid) and burgers will brown etc. Just be patient. • ? Don't be afraid to use a sauce. If it sticks or "stains" the skillet just leave it on the heat and add a little water to it. It will simmer it right off. Then wash with warm water and a little soap. Dry immediately and massage with a little oil, all over, handles too. • ?If something really sticks to it, and it might, especially sweet sauces or something you bake in it, use chain mail to scrape it clean. Rinse and oil. • ?Cast Iron is never a lost cause. You can always salvage them. Scrape. Clean. Oil. Bake, upside down at 350F for an hour. Don't forget to put a sheet pan on the bottom rack to catch drops. • ?Don't be afraid. These aren't delicate, they're sturdy and useful and will last you a lifetime. ?
